Food Philosophy

The food at APERITIVO by CARTA is designed to support the full rhythm of the day. Menus are built for clarity, balance, and consistency, with dishes that work equally well in a casual daytime setting and alongside wine in the evening. We prioritize quality ingredients from trusted suppliers and apply technique only where it adds value. Flavors are clean, portions are intentional, and preparation is streamlined to ensure reliability in service. Our approach avoids excess. No unnecessary complexity, no trend-driven distractions. Food is meant to be approachable, well-executed, and integrated naturally into the overall experience of coffee, lunch, and aperitivo. The goal is simple: food that fits the space, the pace, and the people who come through it.

Barcelona-born and Brooklyn-raised, Silvia Garcia-Nevado is a Culinary Institute of America graduate with experience in leading New York kitchens including Buddakan, The Standard East Village, Petrossian NYC, and Prune. She previously helmed the kitchen at Bar Vinazo, shaping a Spanish-inspired menu rooted in family tradition. Her leadership at APERITIVO by CARTA centers on consistency, clean execution, and food designed to move seamlessly from day to night.
